wish of those help Use a ListIterator, so you can replace the value while iterating:
code :
for (ListIterator<String> iter = story.listIterator(); iter.hasNext(); ) {
    String line = iter.next();
    line = line.replace("[Color]", "BLUE");
    iter.set(line);
}

story.forEach(System.out::println);
Select the type of bread you want to use. Many prefer the taste of BLUE bread, while others prefer [Noun1] bread because it is healthy.
Choose the flavor of Jam/Jelly. I personally prefer [Food] jam, but you can use whatever you want.
 Choose the type of peanut butter - either [Adjective1] or [Adjective2].
Take out [Number] slice(s) of bread.
 Use a [Noun2] to [Verb1] the jam all over on of the pieces of bread.
 Now [Verb2] the peanut butter on the other piece of bread.
Put them together, and you have a PB&J [Verb3].
Map<String, String> map = new HashMap<>();
map.put("Color", "BLUE");
map.put("Adjective1", "SMOOTH");
map.put("Adjective2", "CHUNKY");
map.put("Number", "THREE");

Pattern p = Pattern.compile("\\[([^\\]]+)\\]");
for (ListIterator<String> iter = story.listIterator(); iter.hasNext(); ) {
    String line = iter.next();
    line = p.matcher(line).replaceAll(mr -> map.getOrDefault(mr.group(1), mr.group(0)));
    iter.set(line);
}

How to use an iterator to find a specific title in an object that is part of an arraylist

fixed the issue. Will look into that further For iterating through the Arraylist you can either make use of the for-each loop or iterate using Iterators. You are trying to use both of them together and I dont see any advantage in that. You want to do something like this :
Option 1 :
code :
  Iterator<MediaItem> it = items.iterator();
  while(it.hasNext())
  {
     MediaItem mi = it.next();
     if(mi.getTitle().equals(title))
     {
       mi.setLoanedTo(name);
       mi.setDateLoaned(date);
     }

  }
  for(MediaItem mi : items)
  {
      if(mi.getTitle().equals(title))
     {
       mi.setLoanedTo(name);
       mi.setDateLoaned(date);
     }
  }

In C# - how can I take a specific char from a specific string, which is a part of an array of strings, and then replace

With these it helps Strings are immutable in C#. This means you cannot change a string, but only create a new one from the old with specific changes.
For your case this means you have to replace all the strings in your array with new ones created by replacing C with # in the old ones
code :
for(int i=0; i<Sheet.Length; i++) Sheet[i] = Sheet[i].Replace("C", "#");
Sheet = Sheet.Select(s => s.Replace("C", "#")).ToArray();
for(int i=0; i<Sheet.Length; i++)
{
    string old = Sheet[i];
    int index = old.IndexOf('C');
    if (index < 0) continue; // no C in this string
    Sheet[i] = old.Remove(index, 1).Insert(index, "#");
}

a = a.replace("hello","hi",2).replace("hi","hello",1)
print(a)
a = "hello world, hello there, hello python"
index = a.find("hello",2)
a = a[:index] + a[index:].replace("hello","hi",1)
print(a)
